Our story

I'm Albert, and these are my bees.

I keep a handful of hives on the edge of Kilkenny — that's the whole operation. I spin the honey cold, let it settle, and jar it by hand. Because the batches are small, each season tastes a little different, shaped by whatever the bees found in the hedgerows that year. When a batch is gone, it's gone.

"We're beekeepers, not honey packers."

No blending with imports. No heat to force it clear. No fine-filtering the life out of it. Just one apiary's honey, exactly as the bees made it.

Walk the apiary

Single-apiary wildflower

One honey, shaped by a Kilkenny summer.

My bees work the wildflowers, clover, blackberry blossom and hawthorn of the Kilkenny hedgerows. It's harvested in late summer and jarred straight away — so what you taste is this year, this place, these bees. A note on runny honey: raw honey naturally sets over time. That's proof it's real. Stand the jar in warm water and it returns to gold.

The honeycomb box was the nicest gift I've given all year. And the free candle is such a lovely touch.

Ordered the big jar, it crystallised after a month, popped it in warm water and it was gold again. Exactly as Albert said.
